Superfood “Eggnog” Recipe

This recipe is absolutely perfect for the Winter holidays. Lucuma adds a rich caramel flavor, and the coconut sugar and vanilla powder round out the recipe. Creamy and delicious, you won’t miss your regular, less healthy version of eggnog. Make it for friends and family and enjoy!

1/2 cup lucuma powder
11/2 cups almond milk (see recipe below)
1/2 tsp vanilla powder
3 Tbsp coconut sugar
1/4 tsp nutmeg + 1/4 tsp for garnish
1 tsp chia seeds, ground into powder
dash of Kalahari or Himalayan Salt
Combine all ingredients into high speed blender. Adjust flavors as necessary and place in fridge to set for 15 minutes. Garnish with ground nutmeg, a cinnamon stick and serve!

Simple Almond Milk recipe

16 oz pure water
1 cup soaked almonds
2-4 dates or 1 Tbsp of preferred sweetener (agavehoney, coconut palm sugar, etc.)

Soak almonds in a bowl orcup overnight. Pour out soaking water and place almonds in blender. Pour 8 of your 16 oz of pure water into the blender and add dates/sweetener. Blend on high for 30 seconds. Add remaining 8 oz of pure water and blend for another 30 seconds. Over a large bowl, pour contents of blender into nut milk bag and milk/massage material so that the bowl fills up with your freshly made and strained almond milk.

Notes: Blending first with only half the water is a great way to ensure your almonds are well blended.
